A summery super salad, easy to make, that will leave you feeling so satisfied
This super salad ticks all the boxes. It contains wakame seaweed, coriander, pumpkin and sesame seeds, avocado, ginger, puy lentils, cherry tomatoes and celery for crunch. Teamed up with a zingy dressing made from fresh lime juice and sesame oil. It stimulates the digestion and is loaded with vitamins, minerals and phytonutrients.
Sea vegetables contain some of the broadest range of minerals of any food and interestingly similar minerals as those found in your blood. They are an excellent source of iodine and vitamin C, supporting your thyroid glands which help to stimulate feelings of vitality in our bodies and minds. It is thought the phytonutrient antioxidants in sea vegetables contain anti-inflammatory, anti-cancer, anticoagulant, antithrombotic, and antiviral benefits, all of which support your body and mind.
Avocados have high levels of beneficial anti-inflammatory monounsaturated fat, especially oleic acid, as well as phytonutrients such as beta-carotene, helping to provide a healthy blood flow for a healthy brain. Avocados contain plenty of Vitamin C and B’s that support energy production and improve mood, giving us not only more energy but a good mood as well.
Pumpkin seeds contain good oils and zinc. Zinc is involved in normal brain development and used to achieve optimal energy and hormone levels in our bodies. Zinc plays a key role in behaviour and in making the “feel good” brain chemical serotonin, which helps to keep our mood upbeat and stimulate recovery sleep. Seafood is another great source of zinc.

What’s In It:
- 1 handful cooked puy lentils or other lentils (best cooked in bone broth to aid digestion)
- 2 large stalks celery, finely sliced
- Handful soaked and drained wakame seaweed (follow packet instructions)
- Handful coriander (cilantro) leaves
- Handful cherry tomatoes, quartered
- 1 ripe avocado, de-stoned, peeled and roughly chopped
- 1 tablespoon pumpkin/pepita seeds or watermelon seeds
- 2 teaspoons sesame seeds
- About 1/2 tablespoon coarsely grated fresh ginger
- Juice from 1 large lime
- 2 teaspoons sesame oil
- salt and freshly ground pepper to taste
How To Make:
Throw all the ingredients into a bowl and gently toss together.
Try a little of the salad and add in salt and pepper to your taste.
Pop into bowls and enjoy. Hopefully there’s some leftover for the next day 😉
