Comfort In A Bowl

Made in minutes & eaten slowly. This is my comfort eating - a nourishing warming bowl of brown rice, chickpeas, green veggies, onions, garlic, ginger, chilli & topped with sauerkraut.

I first made this recipe during the UK lockdown and it's become my favourite comfort food, both for its taste & textures, but also because it's great for my gut health.

Serves 2

Ingredients

1 large/about 130g purple onion, peeled & chopped
2 tablespoons extra virgin olive oil
1 teaspoon cumin seeds
½ large/150g broccoli head, shaved ½ long red chilli (long chillis tend to be milder), finely chopped
1 garlic cloves, crushed
1 teaspoon coarsely grated fresh ginger
2 big handfuls/100g chopped kale
1 large handful finely chopped white cabbage
10/15g raw almonds, roughly chopped ½ handful/15g pumpkin seeds
200g cooked brown rice
120g cooked chickpeas
Salt & pepper
2 large eggs or firm tofu 
2 tablespoons sauerkraut or kimchi

Method

Pop the oil, cumin and onions into a large fry pan on medium heat. Gently cook until the onions begin to soften.
Add the broccoli, chilli, garlic & ginger. Gently cook on, stirring occasionally, for a couple of minutes.
Add the kale, cabbage, nuts, seeds & toss to combine. Allow the kale to wilt, then stir in the rice & chickpeas.
Season with salt & pepper, then tip out into 2 bowls.
Quickly fry a couple of large eggs, to add to the bowl. 
Top with some live sauerkraut or kimchi.

Each serve contains approximately 17g of protein, which may be enough for your meal depending on what you eat at other times in the day. If not, top with a second crispy fried egg or crumble through some firm tofu.
